German Chocolate Lara Bites (GF, no sugar added)

Happy National Running Day! A day late...sorry. But I made you this great and fast and easy and chewy and moist treat that's also great for you and great to refuel on a long run! You're welcome. 


The first time I ever ate a Lara Bar was last fall when I ran my first race ever---The Baltimore Half Marathon. Woot! I saw these bars in the store before and thought they looked kind of suspicious and overly healthy, but when they're giving them away for free, I might as well at least taste them. So I did. And it turns out they're so good it's worth


Turns out they really do taste like cookies! And trust me, as the girl who can practically inhale a jar full of charming Chocolate Chip Cookie Butter in fewer days than I care to admit, I don't throw that compliment around lightly. Plus, I love the fact that the sweetness in these little bites comes from the dates, no added sugar, so it doesn't cramp up your stomach when you're running. But running or not, these are pretty great. My favorite is straight out of the freezer. Yum!

Makes 10-12 bites
  • 3/4 c. pitted dates
  • 1/2 c. pecans or walnuts, toasted
  • 2 T. cocoa powder
  • 2 T. shredded coconut, unsweetened
  • 1 tsp. vanilla extract
  • 1/16 tsp. salt
Combine all ingredients in food processor and blend until well combined. Firmly press heaping tablespoons of mixture into bite-size silicone mold (I used a brownie bites mold, which I thought was silly until I got one, so don't judge) or roll into balls.

Maple Pumpkin Bread

It was nasty humid the other day and I was baking bread. Ridiculous, I know. I just needed something fragrant and warm and our crazy weather patterns have got my internal cravings all confused. But my arteries were begging for something that wouldn't automatically cut off the blood flow to my entire body.


So, you guessed it. I've got another flavor-packed bread with no added sugar and it's butter-free! This time pumpkin and maple are hanging out together and it's a very tasty thing.

Maple Pumpkin Bread (No sugar added, Dairy Free) [click to print]
Makes one loaf
  • 2 c. flour
  • 1 tsp. baking soda
  • 1 tsp. ginger
  • 1 tsp. cinnamon
  • 1/2 tsp. cloves
  • 1/2 tsp. salt
  • 3/4 c. maple syrup
  • 1 c. pumpkin puree
  • 1 tsp. vanilla extract
  • 2 eggs
Preheat oven to 250 F. Line loaf pan with parchment paper, leaving a few inches overhang on each side, or generously coat loaf pan with nonstick cooking spray. 

Whisk together flour, soda, spices and salt; set aside. In mixing bowl, beat syrup, pumpkin and vanilla until well combined. Add eggs. Stir in dry ingredients and continue mixing until just combined. 

Pour batter into prepared loaf pan and bake for 60-65 minutes or until done.

Banana Honey Bread

I promise I'm not going all health-food on you (not that it's really a bad thing, it's just not "me", ya know?), but this bread is amazing and it doesn't even have any added sugar in it! Or butter! It's like I'm morphing into someone else. Except for I'm not. And just to prove it to you, I made my very own batch of vanilla scented butter, recipe coming shortly.


But back to the topic at hand...this bread has a soft, spongey texture and is oh-so-moist. The smell of honey fills your home with an intoxicating scent that will make you want to eat the entire loaf while hiding in the pantry (or hall closet, in the case of my tiny apartment) so you don't have to share. But I'm a giving person, so I resisted that urge and didn't do that...this time. I promise I won't judge you if you don't decide to be so gracious.



So get ready for what is quite possibly the easiest banana bread recipe ever.

Banana Honey Bread [click to print]
Makes 1 loaf
  • 2 c. flour
  • 1 tsp. baking soda
  • 1 tsp. cinnamon
  • 1/4 tsp. salt
  • 3/4 c. honey
  • 1/2 c. applesauce, no sugar added
  • 1 tsp. vanilla
  • 2 eggs
  • 3 bananas, mashed (about 3/4 c.)
1) Preheat oven to 350 F. Generously coat loaf pan with nonstick cooking spray and set aside.

2) Whisk together flour, soda, cinnamon and salt; set aside. In mixing bowl, beat honey, applesauce and vanilla until well combined. Add eggs and bananas. Add dry ingredients and continue mixing until just combined.

3) Pour batter into loaf pan and bake for 60-65 minutes or until done.
